Each method has its distinctive features, which largely deal with the content that is extracted and how the operation in itself is performed.
“Flowing” and “Continuous” layouts extract the text, columns, tables and images with formats and breaks, respectively. The “Formatted” and “Plain text” options deal with the way formatting is handled. This is retained in the first function, while the latter discards it. The “Images” function will only pick out images.
A highly useful alternative is the Optical Character Recognition (“OCR”) setting. This is very handy when source files are scanned documents.
